Roasted pig pork or most popularly known as “Lechon” in the Philippines is one of the yummiest food you could ever imagine. Catering Services   companies include this in their heavy lists of menus. When we heard the word Lechon then we could make a lot of fond memories like fiesta, birthdays, Christmas and New Year, and even small family gatherings. People enjoy eating lechon and it has become the centerpiece of any occasions.

So to make our mouth watery, here is a definition of the word lechon or Roasted pig pork is a very juicy and tender meat but with crispy skin that is not over cooked or burned (though it is cooked using direct low fire). The skin is very red that it is encouraging for people to see. Some put herbs on its belly, and some would prefer spice to make it more delicious and aromatic. It is sometimes seasoned with lemongrass while the skin is marinated in milk and a lot of salt.

It is presented using a bamboo and apple on the mouth and as we removed the crispy skin, we will find small layer of fats that lingers at the back of its skin. To make it more perfect, it will be combined with sauce which is very light and sweet and has the taste of liver, spices and pepper flavorings to savor its real taste and essence.

As Filipinos and part of our culture, even it was hard to cook a very heavy pig which is between 20 – 50 kilograms, we still make one in our own backyard.
