Types of Services in Catering Services Banquets

Catering Service businesses offer different types of service, these are plated service (platting), gueridon service, full silver service, buffet service, and cafeteria service. These type of services are given depending on the preference of clients and the theme of the event. There are standard procedures to be used for every kind of service that the catering services business offers.

The plated service is the most common and simplest form of service where the caterer or server will put the food in one plate and delivers it to the customers completely. It is ethical move to present the food in front of the customers coming from their right side and the main dish must be close to them for ease of eating.

Semi silver service became popular because of being similar to the plate service however, the vegetables is separated from the main plate. The waiters will asked the customers which vegetable they prefer and assists them within their table.

While the full silver service, it allow the waiters to serve food directly from the silver platter to the empty plates of their customers. With silver service, the waiter usually holds the food using their right hand and serves the customers with their left hand.

The highest form of food service is what they call gueridon service which sometimes used trolley to serve food to their customers. This is for the VIP section or where the chef compliments occurs.

The cook, kitchen staff and the chef will personally provide the food with special presentation and special parts to acknowledge the presence of these important people. There is also instances that the food being chosen by the customers is cooked and prepared in front of them and allow them to choose which sauce to be an add on to their cuisine.

They could also ask for preferred vegetables or fruits to be included but still attained the optimum taste of the food prepared for them. In this case, the cook or chef must be too knowledgeable of alterations that could be done to the food requested by their customers.

Another kind of service is the famous buffet service where the foods are presented in a long table with wide array of different appetizers, main dish, side dish, and desserts. This is requested by most people who acquire catering services due to lower price and efficient service for large number of guests.

Lastly, cafeteria service is where the customers acquire food from the counter, pay for it and go to their table to eat the food. This is common in schools, large offices (business) or malls.
